L-carnosine is a compound made of two amino acids, beta-alanine and histidine. L-carnosine is highly concentrated in muscle and brain tissues and is found only in meat sources. L-carnosine may have activity as a free-radical scavenger.* N-acetyl L-carnosine is a naturally occurring form of L-carnosine that is resistant to degradation (being broken apart into its constituent amino acids).
